Come dine with us on the farm and experience the pleasures of eating locally. We've created a delicious farm to table menu centered around pork and featuring local foods at the peak of their season, harvested here and at other area farms. What makes this dinner even more special is that it all happens inside the historic Lyman Homestead. Black Hog BrewingYou can expect a beautiful farm setting, great company, great food, and a wonderful sampling of locally crafted beers from Black Hog Brewing Company.

We are at the start of a new harvest, and this is a wonderful way to celebrate the growing season. This plated 5-course farm-inspired dinner includes CT-grown vegetables, meats and cheeses, all accompanied by great drinks specially paired by the experts at Black Hog, and dessert.

Our dinner features the farmers who grow or raise the food we are serving, as well as the Master Brewers from Black Hog. With each course, you will experience peak season freshness and conversations with the farmer/food artisan who contributed to our table. You will learn about the guest farmer’s practices and their passion for growing local food. Of course, our fruits and cider will always be featured!

About our Chef: 
Ben Gaffney: Ben learned to cook from his dad who was a chef in Connecticut. He's worked for Emeril Lagasse at NOLA, Emeril's famous eatery in New Orleans, as well as Lagasse's restaurants in Orlando and Miami where he was executive pastry chef. Before joining the farm, Ben managed the Atticus Bookstore Cafe in New Haven. He won the Iron Chef New Haven competition in 2013. Ben joined the Apple Barrel staff in 2016, and he has reinvented our deli menu and catering offerings.

About Black Hog Brewing Co: 
Black Hog Brewing started with the story of food, family, and a love for craft beer. Brothers Jason and Tom Sobocinski come from a Polish/Italian family where food and drink is always the focus of every gathering. From Jason’s wedding to his son’s birthdays, roasting a pig has become the favorite way to celebrate any special occasion. Tyler Jones, an old family friend and former brewer of The Portsmouth Brewery in New Hampshire, contacted Jason and Tom with a plan to move to New Haven so his wife and son could be closer to their family. With a plan in the works to form a brewery that would celebrate family and food, they needed to encompass all that they were passionate about.

Course 1

Chilled spring pea & mint soup
With New England red shrimp, crispy pancetta and lime creme fraiche
Paired with: Citra Seltzer

 Course 2
Lyman’s apple syrup Glazed Berkshire pork belly
Served with CT microgreens, beetroot reduction, and local goat cheese
Paired with: GINGA NINJA 2.0!

Course 3:
Berkshire Pork Wellington
Pork tenderloin topped with Lyman’s country style pate and baked in buttery puff pastry. Served with spring heirloom carrots, tender lentils infused with smoked ham hocks and blueberry demi-glace.
Paired with: Granola Brown Ale

Course 4:
Connecticut Cured Meats and Cheese
Cato Corner Farm cheeses and Oui Charcuterie salamis served with sun-dried tomato bread, toasted nuts and pickled CT ramps
Paired with: BHB IPA

Course 5:
Butterscotch Pecan Dessert Sausage
Served with Vanilla bean & Orange Blossom Creme Anglaise
Paired with: Bacchanalian Barley Wine!
